QUEEN'S PARK SWIZZLE

Full of color and flavor, this is a great rum refresher

This drink's a beauty. If ever there was a cocktail that made you ask the person across the bar what they were drinking, this is it. The Queen's Park was named for the Trinidad hotel where it was first made in the 1920s. It combines overproof rum, rich syrup and mint for a deceptively strong tiki drink with a delicious bouquet.

This is also an easy drink to make at home since I know everyone's getting a bit stir crazy. Even if there's no one around you to impress, you can impress yourself with this eye catching cocktail and that's what's important.

QUEEN'S PARK SWIZZLE

Ingredients

3 oz. Demerara rum
½ oz. Rich simple syrup
½ oz. Lime juice
2-4 dashes Angostura Bitters
8-10 mint leaves

Instructions

Place mint leaves in tall glass and gently bruise. Add remaining ingredients besides bitters and fill with crushed ice. Use a bar spoon to swizzle - gently twirl the barspoon between your hands - until a frost forms on the outside of the glass. Top with extra ice and dash bitters on top. Garnish with more mint.
