Another look at one of the most famous tiki drinks ever
When the week has been long, taxing, and a little bit scary, you need a Piña Colada. It's an established fact that it's impossible to be upset or anxious when you're sipping on a Piña Colada. Especially if you turn on some island music, lounge on the couch with your eyes closed and pretend you're quarantined on a tropical island somewhere. Recommend making it with dark or Demerara Rum instead of the usual white rum for a more intense and complex flavor.
2 oz. Demerara Rum (or white rum)
1 ½ oz. Pineapple juice
1 oz. Coco Lopez mix (3:1, Coco Lopez; coconut milk)
½ oz. Lime juice
½ oz. Rich Demerara syrup (2:1 sugar, water)
Add all ingredients to shaker with ice and shake until chilled. Pour into hurricane glass and top with crushed ice. Garnish and serve.
