VIEUX FUMEE

Smoky and complex, an excellent riff on a classic Vieux Carre
Whiskey_Sour.jpg

Cognac is difficult to make new cocktails with because of its delicate flavor. For inspiration I turned to one of my favorite cocktails the Vieux Carre. The Vieux Carre is a New Orleans Classic known for its complex flavor and the use of benedictine and Peychaud's Bitters.

By itself, the Vieux Carre is amazing, but I wanted to accentuate the flavor of the cognac a little more while creating a different profile. To do this, I decided to add Cappelletti Amaro Sfumato for some smokiness and Madeira in place of the sweet vermouth. This adds some nuttiness and fruitiness that compliments the cognac well.
