ROSEMARY HONEY FIZZ
Adding rosemary and honey to the classic Gin Fizz
The Gin Fizz is an all time classic that is immediately recognizable. The tall, foamy head is iconic with an airiness and playfulness that's hard to beat. A good Gin Fizz takes a lot of work (not to mention arm strength) to shake to perfection, and although it may not be a bartender's best friend, it's been the basis for a lot of creativity on cocktail menus.
For a riff that adds just a bit of complexity, I substituted the simple syrup for honey and muddled it together with rosemary. This adds some a bit of extra sweetness and a garden fresh taste that tastes amazing together. The result a simple riff that is a perfect summer sipper!
ROSEMARY HONEY FIZZ
Ingredients

1 ½ oz. gin

¾ oz. fresh lemon juice

½ oz. egg white
-
½ tsp. honey
-
3 sprigs of fresh rosemary

3 oz. club soda
Instructions
In a shaker tin, muddle the fresh rosemary, lemon juice and honey. Dry shake for 10 seconds. Add ice, shake for 30 seconds more. Fine strain into a Collins glass and top with club soda. Garnish with lemon and rosemary sprig.
