ROSEMARY PALOMA

Give the margarita a break and give this take on a classic a try

You can't go wrong with a classic Paloma, but this rosemary variation takes it a step further. The slight oakiness and smoke from the Espolon reposado, and the herbal aroma of the rosemary simple syrup, create a drink that can be enjoyed as easily in the winter as it can on a hot summer day.

ROSEMARY PALOMA

Ingredients

  • 1 1⁄2 oz. Espolon Reposado Tequila

  • 3⁄4 oz. Rosemary Simple Syrup

  • 1⁄2 oz. Fresh lime juice

  • 4 oz .Grapefruit soda

Instructions

Add all ingredients into a shaker with ice and shake.

Strain into a Collins glass.

Fill the glass to the top with ice, and top with grapefruit soda.

Garnish with a rosemary sprig.

*Rosemary simple syrup: Combine equal parts cane sugar and water (½ to 1 cup) in a small saucepan. Toss in leaves from 1 sprig of rosemary and bring the mixture to a boil. Reduce to a slow simmer and stir until the sugar dissolves. Remove from the heat and allow the rosemary to steep for another ten minutes. Strain the rosemary leaves and let cool before using and storing in an airtight container. Store in the refrigerator for up to 3 weeks.
