A few blocks northeast of the White House in DC at the corner of K and 12th sits the Eaton Hotel. Inside, past the front desk, and behind a bookcase you can find a cocktail bar called Allegory known for their creative cocktails and standout murals.
The murals on the wall depict Ruby Bridges as Alice in Wonderland taking on the strange world on her own. After conversing with the bartenders for a few hours about the paintings, one of the bar managers Paully Gonzalez dropped this drink in front of me.
It is extremely complex and spirit-forward. The whiskey and mezcal provide an interesting flavor dynamic while the Campari and walnut bitters bring multi-dimensional flavor. Definitely a drink you won't forget. Check out my full length article on Allegory here.
The Jabberwocky
Ingredients
1 oz. Rye
½ oz Del Maguey Vida Mezcal
½ oz. Oloroso sherry
¾ oz. Carpano Antica
¾ oz. Campari
Barspoon orgeat
2 dashes walnut bitters
Pinch of salt
Instructions
Add all ingredients to mixing glass over ice. Stir until well chilled. Serve in cocktail glass over large ice cube.
